Dark-plum and black-cherry aromas unfold with forest floor, subtle floral tones, and a faint vegetal lift. The palate shows elegant yet firm tannins, concentrated dark fruit, and refined balsamic notes carried through a long, slightly savoury, mineral-tinged finish. It pairs beautifully with roasted or grilled meats, braised short ribs, hearty beef stews, pasta with rich meat sauce, mushroom dishes, and comforting classics like garlic-herb roast chicken or seared ribeye. Soils here are rich in minerals, clay, and pink marble fragments, contributing to the wine’s structure and energy. Grapes are hand-harvested, controlled fermentation in cement, followed by post-fermentation maceration and ageing in 23-hl French oak barrels.
