Ample aromas of black cherry, cassis, and new leather. Full-bodied and structured, it reveals dark cherry, blackberry, dark currant, and baking spices with fine tannins. Perfect for your outside get togethers, try it with BBQ or sous-vide steak, braised short ribs, rack of lamb, roasted lamb, or gourmet burgers. Whole-berry fermentation with manual bâtonnage 2–3 times daily during its 14-day primary fermentation. Aged 24 months on lees in French oak, with 25% new medium-toast barrels from Tonnellerie Taransaud and Sylvian. Decant for at least 30 minutes. Drink now through 2035.
