Bush-trained, dry-farmed vines, worked by horse on a biodynamic-minded, certified-organic estate (organic since 2002). Natural fermenation with no added sulphites in open stainless steel tanks, with a 12-to-14-day maceration; the wine then splits its ageing between 50% American oak barrels, 25% foudre and 25% tank.
