Macedonia, Greece – 50% Xinomavro, 30% Limniona, 20% Mavroudi
Aromas of cherry, wild strawberry, and raspberry, with a savoury edge of tomato leaf and dried Mediterranean herbs. The palate is smooth, juicy, and well balanced, with freshness and a bit of snap to the finish. Bright acidity, crunchy red fruit, and soft tannins.
Serve it with grilled meats, cold cuts, and cheese. Give it a light chill. The grapes are sorted by hand, cold-soaked briefly, then fermented slowly in a mix of stainless steel, concrete, and old open-top barrels. It ages nine months on its lees, and no new oak is used at all, so the fruit stays clean and pure.
