Vin de France – 100% Chenin Blanc
Aromas of white-fleshed fruit lifted by clear hints of citrus. The palate strikes a lovely balance between roundness and freshness, closing on a clean, delicious finish. Excellent as an aperitif to open an evening, then easily carried through to shellfish and seafood. It has the fruit and freshness to stand up to Caribbean and Asian dishes too.
35-year-old vines on clay over grey and blue schist. Direct-pressed with two static settlings to clarify the juice and protect the aromatics, then slowly fermented at around 15°C and rested seven months on its lees for added texture and depth.
