Cultivated in a diverse terroir of deep sandstone, broken shale, clay, and basalt, this Gamay Noir features low-vigor vines that produce a modest crop. Native yeast was allowed to complete fermentation slowly, and the wines were aged in a mix of 20% terracotta and 80% neutral barrels. This process yields a wine that brims with spice, red cranberries, perfumed licorice, and floral notes, creating a richly layered experience. Perfect for pairing with grilled meats, earthy mushrooms, and soft cheeses.
