Penedès, Spain — 60% Xarel·lo, 40% Macabeo

Fresh aromas of ripe peach and blood orange lead, complemented by touch of walnuts and white blossoms. On the palate the fine mousse gently caresses, delivering crisp acidity, subtle chalky minerality and a dry, elegant finish with fruit flavours that echo the aromas and a surprising touch of Garlanda (A cake known in the Penedès region). Pair this sparkling delight with creamy goat-cheese crostini, smoked salmon blinis, lightly spiced vegetable tempura or even a festive tray of prosciutto-wrapped melon for a fun twist. The project from sommeliers David Seijas and Guillem Sanz Obach. Aged for a minimum of 20 months en tirage under the traditional method.
