Languedoc, France – 100% Piquepoul Blanc
The nose is fruity and lively, led by lemon and grapefruit. On the palate it is vibrant and refreshing, with a lovely crispness supported by lemony flavours and a nice long finish. Perfect for a platter of oysters or seafood on the table, and the winery calls it essential for exactly that. It also makes an easy aperitif and suits starters, shellfish and fish.
Harvested at night from limestone soils, then destemmed, then left to macerate cold for two hours before pressing in a pneumatic press. The juice is chilled to 4°C and settles for five to six days, then ferments in temperature controlled stainless steel. Then rests for several months on fine lees.
