Pale straw, with aromas of peach, pear and lemon blossom. Ripe melon, fresh stone fruit and Meyer lemon follow, crisp and light with hints of honeysuckle and minerality. Made in the tank method, it won Silver (90 points) at the 2026 National Wine Awards of Canada, and Evolve was named top sparkling producer at the 2025 All Canadian Wine Championships.
Pop it as an aperitif, or pour it with sushi, fish tacos or a bucket of fried chicken.
