A fresh burst of crisp green-apple, citrusy lemon and pear flesh meets a crisp seaside salinity and subtle shell-minerality. On the palate the body is light-to-medium with a clean thread of citrus zest, a hint of white-flower perfume, and a chalky under-tone that leads into a bracing yet smooth finish. Serve with cold-water oysters, steamed mussels with parsley-butter, or goat’s-cheese tartlets in spring; it also works beautifully with grilled sea bass and a light herb salsa when the weather warms. This is a great example of a lean, dry, mineral driven wine. Aged in glass-tiled concrete vats; 6 months ageing on fine lees. Cold stabilization without additives
