Aromas of fresh lemon and green apple with white pear, lifted by a saline, mineral edge. The long time on lees adds a subtle bready, leesy depth and a faintly creamy texture, and weight, while the palate stays dry and bright with a snappy mouth-watering acidity carrying through to a long, stony finish.
A natural with oysters and raw shellfish, but the extra lees weight lets it reach further: grilled white fish, mussels, sushi, or a fresh goat cheese all work well.
