Gaspereau Valley, Nova Scotia – 70% Cabernet Franc, 30% Gamay
Aromas of dried bay leaf, ripe cherry, cassis, fresh herbs, and a whisper of smokiness. On the palate, it’s medium-bodied and silky, with well-integrated power, structured tannins, flavours of fresh berries, savoury herbs, and a touch of forest-floor spice—finishing long and elegant. Serve slightly chilled (13–16 °C) alongside wood oven roasted salmon (from Pulcinella) with broccoli risotto and roasted red pepper cream. Also pairs beautifully with grilled sausage, mushroom stroganoff, BBQ ribs, or charcuterie.
