Languedoc, France – 100% Pinot Noir
Aromas of nutmeg, cinnamon, mocha, and Montmorency cherry. Velvety tannins on the palate, generous and balanced. This would be great with delicate red meats cooked low and slow, fleshy fish like tuna or swordfish, poultry, duck confit, roasted pumpkin, or beetroot gazpacho.
Named for the Turitelles — marine fossils found throughout the vineyards in the Upper Aude Valley, on a limestone-and-clay base at the foot of the Pyrenees. Grapes are given a few days of cold pre-fermentation maceration, fermented at controlled temperature with no added sulphur.
