Juicy aromas of strawberry-and-cream and ripe raspberries mingle with herb-garden notes of tomato leaf, forest floor, and dried lavender. On the palate the wine shows medium body but intense fruit drive, with fine, pithy tannins and a slightly darker core of flavour than the nose initially suggests. The finish is long and savoury, with a hint of cola and chalky minerality. Pair beautifully with herb-roasted lamb, wild mushroom risotto, grilled pork with charred fennel and sage, or an antipasto board with prosciutto, olives and aged pecorino. The “Mind Palace” project reflects a sense of place and story in each bottle.
