Paardeberg, Swartland, South Africa — 100% Chenin Blanc
Aromas of white peach, quince and lime pith, layered with subtle dried-herb and wet-rock undertones. On the palate, crisp acidity meets a fine chalky texture, delivering flavours of bosc pear, citrus pith and a whisper of fynbos-herb complexity, finishing with saline minerality and a lingering chalky note. Try it with seared white fish with lemon-thyme butter, creamy artichoke soup garnished with chives, or a root-vegetable gratin topped with Gruyère and fresh rosemary. The fruit comes from dry-farmed vineyards on decomposed granite soils in Paardeberg, with an emphasis of minimal intervention in the cellar, native ferment, lees ageing and low sulphur.
