Aromas of underbrush and dried flowers, often accompanied by characteristic hints of white pepper — and on the palate, this wine is lively and precise, with bright acidity and fine-grained tannins. Great with a selection of cured meats, fried anchovies, zucchini omelette with ricotta and mint, or ricotta and mint ravioli with tomato sauce — classic Piedmontese pairings that the producer themselves recommends. A chilled glass alongside spring vegetables or a simple antipasto is equally wonderful. Produced from 65-year-old Grignolino vines planted on sandy white marls.
