Saline minerality and chalky limestone lead immediately, followed by ripe apple, salted lemon, and subtle floral tones that hint at honeysuckle. The palate shows more breadth and texture than village Chablis, with a focused core of citrus, orchard fruit, and a gently creamy mid-palate balanced by bright, precise acidity. The finish is long, mineral, and quietly powerful. This would be great with butter-poached lobster, scallops with lemon zest, creamy seafood risotto, or roast chicken with herbs and cream.
Wild yeast primary and malolactic fermentation (complete) followed by 18 months aging on fine lees 50% in stainless steel vats and 50% in oak barrels with minimal action. Bentonite fining.
