Aromas of Green-pear and delicate peach mingle with fresh white-flower and subtle apricot notes on the nose, giving way to a crisp yet rounded palate of citrus, green apple, and a hint of saline minerality. The acidity is lively but balanced, leading to a persistent, slightly nutty finish that feels both refreshing and elegant. Pairs beautifully with gently grilled seafood, lemon-butter fish, vegetable tempura, creamy pasta or risotto — and makes a lovely companion for oysters or soft cheeses at a holiday dinner or summer gathering. Once nearly extinct, Pecorino has seen a resurgence as a native variety expressing regional terroir.
