An energetic palate, with lively acidity, a fine mousse, and a mineral spine that carries flavours of stone fruit, lemon zest, and a delicate savoury twist. The finish is clean, saline and persistent, lingering with floral and toasty echoes. Pair this with creamy risotto, saffron pasta, shellfish, or mushrooms and truffle dishes. Excellent as an aperitif or with light fish courses.
