Fresh red berry aromas, complemented by savoury spices, dark violets, and a subtle graphite undertone. On the palate, it is fresh and elegant, with soft, well-integrated tannins and a light-bodied, balanced profile. Pairing suggestions include steak au poivre, bison burgers, grilled vegetables, and cheeses like feta, goat, and Manchego. Owners Jorge and Saleta Fernández took over the winery in 2019, transitioning from careers in engineering to continue the family legacy. They practice organic and biodynamic viticulture, focusing on small, estate-owned plots with vines aged between 20 to 50 years.
