
Épernay, Champagne, France – 40% Pinot Noir, 40% Pinot Meunier, 20% Chardonnay
Opens with aromas of green apple, apricot, and fresh almond, evolving into notes of pomegranate and anise. On the palate, it is rich and fruity, supported by tight citrus acidity and a delicate saline finish. Serve well-chilled at 10–12 °C. Ideal pairings include lobster brochettes, salmon, scallops, or as an elegant aperitif.
Crafted from organically and biodynamically farmed grapes, the base wine undergoes natural malolactic fermentation. Aged for 9 to 11 months in stainless steel tanks, with 20% in oak barrels, followed by over 2 years on the lees in bottle. Dosage is kept below 4 grams per litre, and the wine is bottled unfined and unfiltered.
