Isle of Islay, Scotland
Established in 2005, Kilchoman (Kil-ho-man) is one of the smallest distilleries in Scotland. Based on a farm on the rugged west coast of Islay, Kilchoman was the first distillery to be built on the island for 125 years. Kilchoman is unique in many ways, most notably for their 100% Islay range, Scotland's only single malt produced from barley both grown and malted on Islay.
This 7 year old single cask was matured in a Buffalo Trace bourbon barrel before being finished in a Pedro Ximénez sherry cask for seven months prior to bottling.
Aromas of rich spices, cinnamon with peat smoke, cooked fruits and citrus. On the palate, peat smoke, sweet toffee, pears, dried fruits and dark chocolate. Long and clean with layers of PX sherry sweetness and rich peat smoke. (56.7% abv.)
