Lovely aromas of mature strawberries, blackberry, and kirsch like ripe red fruits. Followed by spice box, mineral, and floral note of purple violets. Flavours of wild cherry with earthy sandalwood, spicy white pepper but finishing back on a fruity red berry note. Weighty and smooth mouth feel with velvety tannins.
Suggested pairing: Will pair well with white and red meats roasted or grilled, big game, BBQ pork ribs in a hickory sauce, meat casseroles and stews, complex sauces, and foie gras. For vegetable dishes, try it with legumes, roasted eggplant, Ratatouille, potato gratin, or mushroom filled ravioli with sage and butter sauce. For cheeses try it with blue and cured style cheeses.
